Lime

Lime is a collective name for citrus fruits classified as sour citrus, similar to lemon. They are distinguished from lemons by their green colour, size and degree of acidity. It is harvested unripe, the colour is mostly green, but it is also possible to meet with a yellow-green colour.

There are two types of limes:

Mexican limes – a type that is smaller and

Persian green limes - a type that is slightly larger and has a greenish-yellow colour.

How does a lime taste? Limes are very juicy and less acidic than lemons, their taste is more delicate. They have a typical unmistakable smell. The grated peel has a slightly sour taste. It is harvested unripe, but this has no effect on the amount of juice, taste or aroma.

USE:

Lime is often used in cocktails (e.g. Cuba Libre or Mojito) and in salads. Their juice can be used to marinate meat. In Arab countries, limes are pickled like cucumbers. Grated bark is used for sorbets and cakes.
