Caviar
Caviar is a dish made from fish roe, considered a delicacy in many countries. True caviar comes exclusively from sturgeon-like fish, specifically from three species: beluga, Russian sturgeon and star sturgeon. It is always black in colour, i.e. the freshest one is white and turns grey and black over time.
