Caramel

Caramel is a sweet-tasting, orange-brown to black food. It can have a liquid or solid structure. The raw material for its production are different types of sugar - beet, cane or even sugar that is produced by breaking down starches.

It is produced by caramelizing and heating crystal sugar. Caramelization is the breakdown and oxidation of sugar. Depending on the type of sugar, this takes place at a heating temperature of 110 °C to 180 °C. Depending on other ingredients that can be added during heating, different types of caramel are created, e.g. the addition of salt creates salted caramel, which is very popular in gastronomy.
